Thank you Christa! I hopped over and discovered my problem...I always have raw packed my peaches (like my mom did) and poured boiling water into the jar...interesting! I'll have to give it a try. :)

I wonder if there might be other factors to be considered as the cause of the space at the bottom other than cold packing; such as how small the peaches are cut (halves would move less), altitude, or peach type. We always cold pack our peaches and do not have over 1" of space at the bottom of the jars. We can mostly halves, sometimes quarters if the peaches are huge. Here is a link to a picture of our peach canning project. http://heartsforhomeschooling.blogspot.com/2010/09/harvest-time-peaches.html The second picture shows peaches waiting to be canned, and the third picture shows peaches that are canned and cooling off, showing very little space at the bottom.
